We'd had a large lunch on Sunday after going to my Mum's, so we didn't really want anything too big. We also had a few leftovers in the fridge so decided to use some of the leftover cheese as well. This meal turned into a very tasty dish, something I would highly recommend trying.
Serves 2
Ingredients:
- 1 marrow, halved and seeds scooped out.
 - 100 g Chorizo
 - 100 g Feta Cheese, crumbled
 - Approx 30 g extra mature cheddar, grated
 - Approx 30 g hard cheese, grated
 - 1 teaspoon of oregano
 - 1 teaspoon mixed herbs
 - Oil
 - Salt and Pepper
 
Method:
- Preheat the oven to 180 C fan / 200 C
 - Drizzle the marrow with a little oil and bake for approx 15 minutes.
 - Sprinkle the 3 Cheeses, Chorizo and Salt and Pepper on top of the marrow and add put it back into the oven.
 - Baked for another 15 - 20 minutes.
 
I had mine with some bread to mop up the juices / oil, you could of course drain this off but it was really tasty!
